Winemaker's Comment

Deakin Estate Chardonnay
Grape Variety: 100% Chardonnay

A delicious silky wine drinking well now and may also be enjoyed with 2 or 3 years age.

Serve lightly chilled.

A great accompaniment to seafood, poultry, white meats and soft cheeses.

Region: The fruit for this wine was harvested from the Deakin Estate vineyard in Red Cliffs, North West Victoria.
Harvest Date: Early to late February.
Vinification: Some of the juices were fermented with selected yeast strains and others were allowed to ferment naturally, relying entirely on the wild populations of yeast. All ferments were left for three months on yeast lees and stirred to optimise their post ferment interaction, adding a silky palate-feel. Oak maturation was limited to only three months. The philosophy has been to select good fruit at the right time and then proceed with caution and sensitivity, allowing the wine to result largely from the potential within the grapes.

Winemakers Comments: Phil Spillman
Colour: Light yellow with lime green tints.
Nose: White peach, apple and lime notes with a touch of biscuity oak.
Palate: Elegant palate showing ripe stone fruit and citrus flavours in a touch of malty oak. Middle palate richness provides pleasing mouthfeel and the finish is fresh yet persistent.
Wine Specifications: Alc/Vol: 14.5% pH: 3.30 Acidity: 6.6g/l
Cellaring Potential: Enjoy while young but this wine will also develop some further complexities if cellared for two to four years. Serve chilled.

Deakin Estate Shiraz
Grape Variety: 100% Shiraz

This wine is delicious now but will improve with medium term cellaring (3-5 years).

Ideal with red meats, pizza and anything spicy.

Region: The fruit for this wine was harvested from the Deakin Estate vineyard in Red Cliffs, North West Victoria.
Harvest Date: Late March.
Vinification: Fermented in a dozen different batches and then each subjected to slightly different maturation conditions. The various components contribute to the complexity of the final blend.

Winemakers Comments: Phil Spillman
Colour: Medium red. Nose: Enticing plum and blackberry aromas with hints of cinnamon and dark chocolate. Palate: Medium bodied with fine tannins, allowing an extended focus of rich plum and blackberry flavours along the palate.
Wine Specifications: Alc/Vol: 14.5% pH: 3.50 Acidity: 6.8g/l
Cellaring Potential: Although very appealing now this wine will develop until 2007.

Deakin Estate Rose
Grape Variety: Cabernet Sauvignon & Merlot

Ideal with a picnic, a patio meal or barbeque on a hot summers day is the recently released Deakin Estate Rose.

It will accompany a paella or risotto very nicely too.

Region: The fruit for this wine was harvested from the Deakin Estate vineyard in Red Cliffs, North West Victoria.
Harvest Date: Mid to late March
Vinification: The juice was limited to only one half-day of skin contact and then it was drained, clarified and fermented as a white wine. Different batches of Cabernet Sauvignon and Merlot were produced to allow for the best blend to be determined. A small amount of residual sugar has been left in the blend by arresting one of the ferments.

Winemakers Comments: Phil Spillman
Colour: A radiant light red. Nose: Fragrant with red berries, ripe watermelon and a hint of creamy vanilla. Palate: Soft and round, a mouth-full of strawberries and cream, with a refreshing acid balance.
Wine Specifications: Alc/Vol: 13.5% pH: 3.00 Acidity: 7.2g/l RS: 7.2g/l
Cellaring Potential: Enjoy while young, over a year or two.
